Kawatsuru Sake Brewery's popular sake "Sanuki Cloudy" It would be a shame not to discover this sake! A nonconformist in the world of Japanese sake, it has a unique taste. It is made with white koji, which produces a lot of citric acid in the koji mold which requires three times more koji than usual. It also contains a lot of sediment which gives it a creamy texture and a slight sweet and sour taste. Originally, Sanuki Cloudy was a sake that paired well with the local gourmet of Kagawa, the brewery's hometown, "Honetsukidori".
When you drink it, it really tastes like a lactic acid drink, and it's like yogurt, it goes very well with spicy meat dishes and fried foods.
The brand name "Kawazuru" is said to have been named by the first brewery because a crane dove into the clear "Kaida River." The Zaida River, also known locally as Takaradagawa, is a water source that brings treasure to the rice fields. The brewery's goal is to create a strong and refreshing sake quality by using the river's groundwater as brewing water.
